Preheat your air fryer to 400°F (200°C) for about 5 minutes.
In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix well to ensure even distribution of the spices.
In another bowl, beat the eggs until well mixed.
Dip each zucchini fry into the beaten eggs, allowing any excess to drip off.
Next, coat each fry in the breadcrumb mixture, pressing gently to ensure it adheres well.
Lightly spray the air fryer basket with olive oil to prevent sticking. Place the zucchini fries in a single layer in the basket. Make sure they are not overlapping.
Spray the top of the zucchini fries lightly with olive oil.
Air fry the zucchini fries for about 10-12 minutes, flipping them halfway through for even crisping, until golden brown and crispy.
Once cooked, remove them from the air fryer and serve immediately while hot.
Notes
Serve with marinara or ranch dressing for dipping. Garnish with extra Parmesan and chopped fresh parsley.
