Instructions
Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
In a large mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. Mix well to create the coating.
Drizzle the olive oil over the sliced zucchini and toss gently until all pieces are well-coated.
Take each zucchini slice and dip it into the Parmesan breadcrumb mixture, ensuring it's fully covered.
Lay the coated zucchini slices in a single layer in the air fryer basket. Make sure to leave some space between each slice for even cooking. You may need to do this in batches depending on the size of your air fryer.
Lightly spray the tops of the zucchini chips with cooking spray to enhance crispiness.
Air fry the zucchini slices for 10-12 minutes, turning them halfway through the cooking time for even browning. Keep an eye on them, as cooking times may vary slightly based on your air fryer model.
Once golden brown and crispy, carefully remove the zucchini chips from the air fryer and let them cool for a couple of minutes before serving.
