In a large bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure even distribution of the spices and cheese.
In another bowl, place the beaten eggs.
Dip each chicken cube first into the beaten egg, making sure it's thoroughly coated, then roll it in the breadcrumb mixture, pressing lightly to adhere the crumbs to the chicken. Repeat this for all chicken pieces.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Arrange the coated chicken nuggets in the air fryer basket in a single layer, ensuring they are not crowded (you may need to do this in batches).
Lightly mist the chicken nuggets with olive oil using a cooking spray or a mister. This helps achieve a golden and crispy exterior.
Cook the nuggets in the air fryer for 10-12 minutes, flipping halfway through the cooking time for even crispiness. Make sure the internal temperature of the chicken reaches 165°F (75°C).
Once cooked, remove the nuggets from the air fryer and let them cool slightly before serving.
Notes
