chicken breast, cut into bite-sized pieces

buttermilk (or dairy-free alternative)

all-purpose flour

panko breadcrumbs

teaspoon
garlic powder

teaspoon
onion powder

teaspoon
smoked paprika
1
teaspoon
dried oregano
to taste
salt and pepper

cooking spray (or olive oil for drizzling)
Instructions
In a bowl, marinate the chicken pieces in buttermilk for at least 30 minutes to an hour to tenderize.
In a separate bowl, combine the flour, garlic powder, onion powder, smoked paprika, dried oregano, salt, and pepper. Mix well.
In another bowl, place the panko breadcrumbs.
Remove chicken from buttermilk and let the excess drip off.
First, dredge the chicken pieces in the flour mixture, making sure to coat them evenly.
Next, dip each floured piece into the panko breadcrumbs, pressing gently to adhere.
Preheat the air fryer to 400°F (200°C) for 5 minutes.
Lightly spray or drizzle the air fryer basket with cooking spray or olive oil to prevent sticking.
Place the chicken bites in a single layer in the air fryer basket; do not overcrowd.
Air fry for 10-12 minutes, shaking the basket halfway through. Cook until golden brown and crispy, and the internal temperature reaches 165°F (75°C).
Remove from the air fryer and let rest for a couple of minutes before serving.
Notes
Serve with your favorite dipping sauce and garnish with fresh parsley.
