500g chicken breast, diced

2 medium zucchinis, sliced into half-moons

1 large red bell pepper, sliced

1 large yellow bell pepper, sliced

1 onion, finely chopped

3 cloves garlic, minced

200ml coconut cream

1 tablespoon paprika powder

1 teaspoon dried oregano

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Stir in the minced garlic and cook for an additional minute, until fragrant.

        Increase the heat to medium-high and add the diced chicken breast. Season with salt and pepper, cooking until browned on all sides (about 5-7 minutes).

          Add the sliced red and yellow bell peppers to the skillet and sauté for another 3-4 minutes until they start to soften.

            Stir in the sliced zucchinis, paprika powder, and oregano. Cook for an additional 4-5 minutes, allowing the zucchinis to soften slightly.

              Pour in the coconut cream and bring the mixture to a gentle simmer. Let it cook for about 5 minutes, stirring occasionally, until the sauce thickens and all ingredients are well combined.

                Taste and adjust seasoning with more salt and pepper if desired.

                  Remove from heat and garnish with freshly chopped parsley before serving.
