For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

¼ teaspoon salt

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

¼ cup sour cream

2 tablespoons all-purpose flour

1 teaspoon lemon juice

For the Brûlée Topping:

¼ cup granulated sugar (for caramelizing)

Fresh berries, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C).

    Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and salt until well combined. Press this mixture firmly into the bottom of a lined 9x9-inch baking pan to create an even layer. Bake for 10 minutes until set. Remove from the oven and let it cool.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the sugar and continue to beat until fully combined.

        Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract, sour cream, flour, and lemon juice until everything is just combined—be careful not to overmix.

          Bake the Cheesecake Layer: Pour the cheesecake mixture over the cooled crust, smoothing out the top with a spatula. Bake in the preheated oven for about 35-40 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

            Chill: Once cooled to room temperature, transfer the baking pan to the refrigerator and chill for at least 4 hours, or overnight for best results.

              Caramelize the Sugar: Before serving, sprinkle an even layer of granulated sugar over the top of the chilled cheesecake bars. Using a kitchen torch (or the broil function of your oven), carefully caramelize the sugar until it melts and forms a crispy crust. Allow the sugar to cool for a couple of minutes until it hardens.

                Serve: Slice the cheesecake bars into squares and optionally garnish with fresh berries.
