Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

3 large eggs

1 cup heavy cream

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon salt

¼ cup brown sugar (for topping)

Fresh berries (for garnish - optional)

Mint leaves (for garnish - optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Prepare Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the heavy cream. Start and end with the flour mixture, mixing just until combined.

Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake: Allow the cake to cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely.

Prepare the Topping: Once the cake is completely cool, evenly distribute the brown sugar over the top of the cake. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy crust. If you do not have a torch, place the cake under the broiler for just a couple of minutes, watching closely to prevent burning.

Serve: Slice the cake and serve immediately. Optionally, garnish each slice with fresh berries and mint leaves for an added pop of color and flavor.
