8 oz linguine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

    Sauté Shrimp: In a large skillet over medium-high heat, add the olive oil. Once hot, add the shrimp and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and cook until fragrant, about 1 minute. Add the cherry tomatoes and sauté until they start to soften, about 3-4 minutes.

        Add Spinach and Cream: Stir in the fresh spinach until wilted, then pour in the heavy cream. Bring to a gentle simmer. Add the red pepper flakes if using, and season with additional salt and pepper to taste.

          Combine Ingredients: Lower the heat, and slowly stir in the Parmesan cheese until melted and smooth. Add the cooked linguine and shrimp back into the skillet, tossing to coat everything in the creamy sauce.

            Garnish and Serve: Remove from heat, garnish with fresh basil, and serve immediately with extra Parmesan on the side.
