Ingredients

12 oz. fresh or frozen ravioli (cheese or spinach-filled)

2 tbsp olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp dried Italian herbs (oregano, basil)

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Red pepper flakes for a kick

Instructions

Cook the Ravioli: In a large pot, bring salted water to a boil. Add the ravioli and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

Add Garlic and Tomatoes: Stir in the minced garlic and halved cherry tomatoes. Cook for another 3-5 minutes until the tomatoes begin to soften.

Incorporate Spinach: Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, stirring until wilted.

Make it Creamy: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese and dried Italian herbs. Cook for about 3-4 minutes until the sauce is creamy and thickened. Season with salt, pepper, and red pepper flakes if you prefer some heat.

Combine with Ravioli: Gently fold the cooked ravioli into the creamy sauce, mixing them well to ensure they are coated evenly.

Serve: Plate the ravioli and drizzle some extra sauce over the top. Garnish with fresh basil leaves for a pop of color and flavor.

Enjoy: Serve immediately and savor the creamy, herby goodness!
