1 lb large prawns (peeled and deveined)

3 cups baby spinach

1 cup cherry tomatoes, halved

1/2 cup sun-dried tomatoes, chopped

3 cloves garlic, minced

1/2 cup heavy cream

1/2 cup chicken or vegetable broth

1/2 cup grated Parmesan cheese

3 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Lemon wedges for serving

Sauté the Prawns: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the prawns, season with salt and pepper, and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the prawns from the skillet and set aside.

    Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and sun-dried tomatoes, cooking for an additional 2-3 minutes until the tomatoes soften.
