Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach, packed

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Cooked pasta or rice, for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, ensuring not to burn it.

    Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      In the same skillet, add the cherry tomatoes and Italian seasoning. Sauté for 2-3 minutes until the tomatoes start to soften.

        Reduce the heat to low and add the heavy cream, stirring to combine. Bring to a gentle simmer.

          Stir in the grated Parmesan cheese until melted and smooth. Add the baby spinach and continue cooking until wilted.

            Return the cooked shrimp to the skillet and toss them in the creamy sauce until well coated. Taste and adjust seasoning with more salt and pepper if needed.

              Serve over cooked pasta or rice, garnished with fresh basil for an extra touch.
