Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the ground turkey or beef to the pot. Cook until browned and cooked through, breaking it apart as it cooks (about 5-7 minutes).
Once the meat is cooked, sprinkle in the taco seasoning and stir well to coat the meat and onions evenly.
Pour in the chicken or vegetable broth, black beans, corn, and diced tomatoes. Bring the mixture to a gentle simmer.
Reduce the heat to low and add the softened cream cheese, stirring constantly until melted and fully incorporated into the soup.
Add the shredded cheddar cheese and stir until melted. Adjust seasoning with salt and pepper to taste.
Let the soup simmer on low for 10-15 minutes to allow the flavors to meld together.
