12 oz penne pasta

2 tablespoons olive oil

1 pound chicken breast, diced

Salt and pepper, to taste

4 cloves garlic, minced

1 cup sun dried tomatoes in oil, drained and roughly chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

½ cup fresh spinach

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Stir in the sun dried tomatoes and cook for an additional 2 minutes.

        Combine Ingredients: Pour in the heavy cream and chicken broth, stirring to combine. Sprinkle in the Italian seasoning and let it simmer for about 3-5 minutes until slightly thickened.
