12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, based on preference)

1 cup heavy cream

1 cup cherry tomatoes, halved

2 cups fresh spinach, roughly chopped

1 medium onion, diced

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tsp red pepper flakes (optional)

2 tbsp olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Boil the Pasta: Begin by bringing a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later.

    Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Remove excess grease if necessary.

      Sauté Vegetables: Add the diced onion to the skillet with the sausage and cook until translucent, about 3-4 minutes. Stir in the minced garlic and red pepper flakes (if using), and sauté for an additional minute until fragrant.

        Combine Ingredients: Pour in the heavy cream, stirring to combine. Add the halved cherry tomatoes and let the mixture simmer for about 3-4 minutes until the tomatoes soften slightly.
