12 oz pasta (your choice, like fettuccine or penne)

1 ½ cups ricotta cheese

2 cups broccoli florets

3 tablespoons olive oil

2 cloves garlic, minced

1 lemon (zested and juiced)

½ teaspoon red pepper flakes (optional)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat your oven to 425°F (220°C).

    On a baking sheet, toss the broccoli florets with 2 tablespoons of olive oil, salt, and pepper. Spread them out evenly and roast in the oven for 15-20 minutes until the edges are crispy and the broccoli is tender.

      Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

        In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes, until fragrant, but be careful not to brown the garlic.

          Add the cooked pasta to the skillet, followed by the ricotta cheese, lemon zest, and lemon juice. Mix well, adding reserved pasta water a little at a time until you reach your desired creaminess.

            Stir in the roasted broccoli and grated Parmesan cheese. Mix to combine, then season with salt and pepper to taste.
