2 cups of pasta (fusilli or penne)

2 tablespoons olive oil

1 pound chicken breast, diced

3 cloves garlic, minced

1 cup spinach, fresh or frozen

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Zest of 1 lemon

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Cook Garlic and Spinach: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the spinach and cook until wilted (if using fresh) or heated through (if using frozen).

        Combine Ingredients: Lower the heat and add the cooked chicken back into the skillet. Stir in the ricotta cheese, Parmesan cheese, and reserved pasta water, mixing until creamy. Add the cooked pasta and toss to combine.

          Season and Serve: Season with more salt, pepper, and red pepper flakes (if using) to taste. Stir in lemon zest for freshness. Serve immediately, garnishing with fresh basil leaves.
