4 large russet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup milk

3 tablespoons unsalted butter

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

½ cup shredded cheddar cheese (plus extra for garnish)

¼ cup green onions, chopped (for garnish)

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

    Add the minced garlic and thyme, cooking for another minute until fragrant.

      Stir in the diced potatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

        Once the potatoes are done, use an immersion blender to puree the soup until smooth. (Alternatively, you can transfer it to a blender in batches, but be cautious with the hot liquid.)

          Return the blended soup to the pot and stir in the heavy cream and milk. Heat gently, being careful not to bring it to a boil.

            Season the soup with salt and pepper to taste. Stir in the shredded cheddar cheese until melted and uniformly mixed.

              Serve hot, garnished with additional shredded cheese and chopped green onions.
