1 package (16 oz) frozen pierogi (cheese or potato-filled)

1 lb turkey sausage, sliced

1 medium onion, diced

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon Dijon mustard

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup fresh spinach, roughly chopped

1/2 cup sour cream (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced turkey sausage and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.

    In the same skillet, add the remaining olive oil, diced onion, and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

      Carefully add the frozen pierogi to the skillet. Pour in the chicken broth and let them simmer for about 5-7 minutes or until they float to the top, stirring occasionally.

        Once the pierogi are cooked, introduce the turkey sausage back into the skillet along with the heavy cream, Dijon mustard, and paprika. Stir well to combine.

          Allow the mixture to simmer for another 3-4 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

            Just before serving, stir in the fresh spinach and cook until wilted, about 2 minutes.

              Serve warm topped with a dollop of sour cream and garnished with fresh parsley.
