200g fresh spinach, washed and roughly chopped

1 small onion, finely diced

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon Italian seasoning (or dried oregano/basil)

Salt and pepper to taste

50g grated Parmesan cheese (plus extra for serving)

A pinch of nutmeg (optional)

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.
