Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for heat preference)

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

1 tablespoon lemon juice

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp, sprinkle with salt and pepper, and sauté for about 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare the Sauce: In the same skillet, reduce the heat to medium-low and add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

Add the Cream: Pour in the heavy cream and chicken broth, stirring continuously. Bring the mixture to a gentle simmer.

Cheese It Up: Gradually add the grated Parmesan cheese while stirring until the cheese melts and the sauce is creamy. If the sauce is too thick, you can add a splash of the reserved pasta water to reach your desired consistency.

Incorporate Veggies: Add the cherry tomatoes and spinach to the sauce. Cook until the spinach wilts and the tomatoes soften slightly.

Combine: Add the cooked fettuccine and the sautéed shrimp into the skillet. Gently toss everything together until the pasta is well coated in the creamy sauce.

Finish It Off: Stir in the lemon zest and lemon juice for a fresh kick. Adjust seasoning with more salt and pepper if needed.

Serve: Plate the creamy shrimp pasta and garnish with fresh parsley.
