1 cup orzo pasta

2 cups vegetable broth

½ cup Boursin cheese (any flavor)

1 tablespoon olive oil

1 small shallot, finely chopped

2 cloves garlic, minced

1 lemon, zested and juiced

1 cup fresh spinach, chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes.

    While the orzo cooks, heat olive oil in a large skillet over medium heat. Add the shallot and sauté until translucent, about 3-4 minutes.

      Add the minced garlic and sauté for another minute, ensuring it doesn't burn.

        Once the orzo is cooked, reserve about ½ cup of the broth, then drain the rest. Add the cooked orzo to the skillet with the shallot and garlic.

          Stir in the Boursin cheese, lemon zest, lemon juice, and reserved broth. Mix until the cheese is melted and creamy, and the pasta is well-coated.

            Fold in the chopped spinach, cooking for another minute until wilted. Season with salt and pepper to taste.

              Serve warm, garnished with fresh parsley.
