4 salmon fillets, skin-on

1 cup of mushrooms, sliced (cremini or button)

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

½ cup chicken or vegetable broth

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Salmon: Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper.

    Cook the Salmon: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the salmon fillets, skin side down. Cook for about 4-5 minutes until the skin is crispy. Carefully flip the salmon and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside on a warm plate.

      Sauté the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil and the sliced mushrooms. Sauté for about 4-5 minutes until they are golden brown and tender.

        Add Garlic: Add the minced garlic to the skillet with the mushrooms and cook for an additional 1 minute, until fragrant.

          Make the Cream Sauce: Pour in the chicken or vegetable broth and bring to a simmer. Whisk in the heavy cream and Dijon mustard, stirring continuously until the sauce thickens slightly, about 3-4 minutes. Season the sauce with salt and pepper to taste.

            Combine: Return the salmon fillets back to the skillet, spooning the creamy garlic mushroom sauce over them. Cook for another 2-3 minutes to heat through.
