1 lb sirloin steak, cut into bite-sized pieces

Salt and pepper to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

½ cup heavy cream

2 tablespoons parmesan cheese, grated

2 lbs russet potatoes, peeled and quartered

½ cup milk (more if needed)

3 tablespoons butter (for mashed potatoes)

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Start by bringing a large pot of salted water to a boil. Add the quartered potatoes and cook until fork-tender, about 15-20 minutes. Drain and set aside.

    Cook the Steak Bites: In a large skillet over medium-high heat, add the olive oil. Season the steak pieces with salt and pepper. Once the oil is hot, add the steak bites in a single layer. Cook for about 2-3 minutes on each side or until browned and cooked to your liking (medium-rare is about 135°F). Remove the steak from the skillet and set aside.

      Make the Creamy Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic, fresh rosemary, and thyme. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.

        Combine Sauce and Steak: Stir in the heavy cream and parmesan cheese, allowing it to simmer for 2-3 minutes to thicken. Add the cooked steak bites back to the skillet, tossing them in the sauce to coat well. Cook for an additional minute.

          Prepare the Mashed Potatoes: While the steak bites are finishing up, return to the drained potatoes. Add 3 tablespoons of butter, and gradually add the milk until you reach your desired creamy consistency. Mash with a potato masher until smooth and season with salt to taste.
