2 large cucumbers, thinly sliced

2 large carrots, grated

1/2 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon honey

1 garlic clove, minced

Salt and pepper to taste

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1/4 cup chopped walnuts or pecans (optional for crunch)

Instructions
 

In a large mixing bowl, combine the thinly sliced cucumbers and grated carrots.

    In a separate bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, honey, and minced garlic. Mix until smooth and well combined.

      Season the yogurt mixture with salt, pepper, and fresh dill (or dried dill). Adjust to taste.

        Pour the yogurt dressing over the cucumber and carrot mixture, gently folding to combine until all vegetables are evenly coated.

          If desired, add chopped nuts for an extra crunch and fold them in.
