1 cup red lentils, rinsed

1 can (13.5 oz) coconut milk

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons curry powder

1 teaspoon turmeric

1 teaspoon ground cumin

1 medium carrot, diced

1 bell pepper (red or yellow), diced

4 cups vegetable broth

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Juice of 1 lime

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until translucent.

    Add the minced garlic and grated ginger to the pot, and sauté for another minute until fragrant.

      Stir in the curry powder, turmeric, and ground cumin, cooking for an additional minute to toast the spices.

        Add the diced carrot and bell pepper to the pot, and cook for an additional 3-4 minutes, stirring occasionally.

          Pour in the rinsed lentils, vegetable broth, and coconut milk. Bring the mixture to a boil, then reduce to a simmer.

            Cover and let the soup simmer for about 20-25 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.

              Once the lentils are cooked, use an immersion blender to blend the soup until smooth, or leave it chunky if you prefer.

                Season with salt and pepper to taste, and squeeze lime juice over the soup for added freshness.

                  Serve hot, garnished with fresh cilantro.
