1 lb (450g) gnocchi (store-bought or homemade)

8 oz (225g) Spanish chorizo, sliced

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (100g) cherry tomatoes, halved

1/2 cup (50g) grated Parmesan cheese

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh basil, for garnish

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Once done, drain and set aside.

    Sauté the Chorizo: In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook for about 5 minutes, or until it starts to crisp up and release its oils.

      Add Aromatics: Toss in the diced onion and continue to sauté for another 3-4 minutes until the onion is translucent. Add the minced garlic and stir for an additional 30 seconds until fragrant.

        Create the Sauce: Pour in the heavy cream, stirring to combine. Add the halved cherry tomatoes, smoked paprika, and grated Parmesan cheese. Let it simmer for about 3-5 minutes, stirring occasionally until the sauce slightly thickens.
