1 lb potato gnocchi

8 oz chorizo, casing removed and crumbled

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, finely diced

1 cup baby spinach (optional)

1 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (for garnish, optional)

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the surface (usually 2-3 minutes). Drain and set aside.

    Sauté the Chorizo: In a large skillet over medium heat, add the olive oil. Once hot, add the crumbled chorizo. Cook for about 5-7 minutes, or until browned and cooked through. Use a wooden spoon to break it apart as it cooks.

      Add Aromatics: Add the diced onion to the skillet and cook for another 3-4 minutes until it becomes translucent. Then, stir in the minced garlic and cook for an additional minute, being careful not to burn it.

        Create the Creamy Sauce: Lower the heat to medium-low and pour in the heavy cream, stirring to combine. Allow it to simmer gently for a few minutes until it begins to thicken.

          Combine Everything: Stir in the cooked gnocchi along with the grated Parmesan cheese. Mix until the gnocchi is well coated in the creamy sauce. If using, fold in the baby spinach and cook until wilted (about 1-2 minutes). Season with salt, pepper, and red pepper flakes to taste.
