2 cups cooked chicken, shredded

8 ounces spaghetti or fettuccine

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup mushrooms, sliced

1 cup frozen peas

3 cups chicken broth

1 cup heavy cream or coconut cream for a lighter option

1 teaspoon dried thyme

1 teaspoon garlic powder

1 cup grated Parmesan cheese, plus extra for topping

Salt and pepper to taste

Preheat the oven to 375°F (190°C).

    Cook the pasta: In a large pot of boiling salted water, cook the spaghetti or fettuccine according to package instructions until al dente. Drain and set aside.

      Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, cooking until they are translucent (about 2-3 minutes). Stir in the sliced mushrooms and cook for an additional 4-5 minutes until they are tender.

        Combine ingredients: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, peas, cooked pasta, chicken broth, heavy cream, thyme, garlic powder, and 1 cup of Parmesan cheese. Season with salt and pepper to taste. Stir until everything is well mixed.
