9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup basil pesto (store-bought or homemade)

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: In a large pot, boil water and cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1/2 cup of mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Roll Ups: Spread a layer of basil pesto on each lasagna noodle. Take a scoop of the chicken mixture and spread it evenly over the noodles. Carefully roll each noodle up from one end to the other.

          Prepare the Baking Dish: Pour the heavy cream into the bottom of a 9x13 inch baking dish to create a creamy base. Arrange the lasagna roll-ups seam side down in the dish.

            Top with Pesto and Cheese: Drizzle any remaining pesto over the top of the roll-ups, then sprinkle with the remaining mozzarella and Parmesan cheese.

              Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
