2 tablespoons unsalted butter

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, peeled and cubed

4 cups chicken broth

1 cup diced cooked ham

1 cup frozen sweet corn

1 cup half-and-half

1 ½ cups shredded sharp cheddar cheese

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Green onions, chopped (for garnish)

Instructions
 

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the cubed potatoes to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 15 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, add the diced ham and frozen sweet corn to the pot. Stir well and allow to simmer for another 5 minutes.

          Reduce the heat to low and slowly stir in the half-and-half. Gradually mix in the shredded cheddar cheese, stirring continuously until melted and creamy.

            Add the dried thyme, smoked paprika, and season with salt and pepper to taste. Stir to combine and let simmer for another 2-3 minutes, allowing all flavors to meld.

              Serve hot, garnished with chopped green onions for a burst of color and flavor.
