8 ounces fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon Cajun seasoning (adjust to taste)

Salt and pepper, to taste

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1/2 teaspoon red pepper flakes (for extra heat)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and sliced red bell pepper. Sauté for about 3-4 minutes until they soften. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Pour in the heavy cream and chicken broth, bringing the mixture to a simmer. Stir in the Parmesan cheese until melted and creamy. If desired, add red pepper flakes for extra heat.

          Combine: Return the cooked chicken to the skillet and toss to coat in the creamy sauce. Add the cooked fettuccine and gently toss everything together until well combined. Let it cook for another 2-3 minutes to heat through.

            Serve: Remove from heat and garnish with chopped fresh parsley. Serve immediately with extra Parmesan cheese on the side, if desired.
