Ingredients

8 oz penne pasta

1 lb boneless, skinless chicken breast, diced

2 cups broccoli florets

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, diced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning, and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the diced onion and sauté until translucent, about 4 minutes. Add the garlic and broccoli florets, cooking for another 3-4 minutes until the broccoli is tender yet still vibrant.

Make the Cream Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and cook for about 5 minutes, allowing it to thicken slightly. Add the grated Parmesan cheese and stir until melted and creamy.

Combine Everything: Return the cooked chicken to the skillet along with the penne pasta. If the sauce is too thick, add some of the reserved pasta water to reach your desired consistency. Mix well to coat the pasta, chicken, and broccoli in the creamy sauce.

Serve: Garnish with fresh parsley if desired. Serve hot with additional grated Parmesan cheese on the side.
