8 ounces rotini pasta

1 pound ground beef

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper to taste

1 cup baby spinach (optional for garnish)

Fresh parsley, chopped (for garnish)

Additional Parmesan for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add olive oil. Once hot, add ground beef and cook until browned, breaking it up with a spatula. Drain any excess fat.

      Sauté the Garlic: Add minced garlic to the beef in the skillet and sauté for about 1 minute until fragrant. Stir in the onion powder and Italian herbs.

        Make the Sauce: Reduce the heat to low. Pour in the heavy cream, stirring to combine. Add the Parmesan cheese gradually while stirring continuously until melted and smooth. If the sauce is too thick, you can add a splash of pasta cooking water to reach desired consistency.

          Combine Pasta and Sauce: Add the cooked rotini to the creamy beef mixture, tossing gently until the pasta is well coated with the sauce. Season with salt and pepper to taste.

            Garnish and Serve: If using, stir in the baby spinach until wilted. Remove from heat and serve hot, garnished with chopped parsley and additional Parmesan cheese.
