Ingredients

8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup panko breadcrumbs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.

Cook the elbow macaroni according to package directions until al dente; drain and set aside.

In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until golden.

Gradually pour in the milk while continuously whisking to avoid lumps. Continue to whisk until the mixture thickens, about 3-5 minutes.

Reduce heat; stir in the sharp cheddar, mozzarella, and Parmesan cheeses until melted and creamy. Add garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste.

Combine the cooked macaroni with the cheese sauce, ensuring all pasta is well-coated.

Transfer the mac and cheese to the prepared baking dish.

In a small bowl, mix the panko breadcrumbs with olive oil, then sprinkle evenly over the mac and cheese for a crispy topping.

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Remove from the oven and let it cool slightly before serving. Garnish with chopped parsley for added freshness.
