8 oz (225 g) fettuccine or pasta of choice

6 slices of thick-cut bacon, chopped

8 oz (225 g) cremini or button mushrooms, sliced

3 cloves garlic, minced

1 cup (240 ml) heavy cream

1/2 cup (120 ml) chicken broth (or pasta water)

1 cup (100 g) grated Parmesan cheese

1/2 tsp Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: Boil salted water in a large pot. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Prepare the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving the rendered fat in the skillet.

      Sauté the Mushrooms: In the same skillet, add the sliced mushrooms to the bacon fat. Cook for about 5 minutes until browned and softened. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Create the Sauce: Reduce the heat to low and pour in the heavy cream and chicken broth (or reserved pasta water). Stir to combine and bring to a gentle simmer.

          Add Cheese & Seasoning: Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. Then, add the Italian seasoning, salt, and pepper to taste.

            Combine Pasta & Sauce: Add the cooked pasta to the skillet with the creamy sauce. Toss to coat evenly. If the sauce is too thick, add a bit more reserved pasta water until you reach your desired consistency.

              Finish: Stir the crispy bacon back into the pasta. Taste and adjust seasoning if necessary.
