4 bone-in pork chops (about 1 inch thick)

2 cups fresh mushrooms, sliced (button or cremini)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

2 tablespoons butter

1 teaspoon dried thyme

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley for garnish

Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Season both sides of the pork chops with salt and pepper. Sear the chops for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, melt the butter. Add the chopped onions and sauté for about 3-4 minutes until they become translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for approximately 5-7 minutes until they are browned and have released their moisture.

        Create the Sauce: Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Stir in the heavy cream, thyme, salt, and black pepper. Allow the sauce to simmer for about 5-6 minutes until it thickens slightly.

          Combine and Serve: Return the seared pork chops to the skillet, nestling them into the creamy mushroom sauce. Let them simmer for an additional 2-3 minutes to reheat and absorb some sauce flavor.

            Garnish and Enjoy: Remove from heat and garnish with freshly chopped parsley before serving. The pork chops can be paired with mashed potatoes or rice to soak up the delicious cream sauce.
