1 lb (450g) boneless, skinless chicken breasts, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by heating the olive oil and butter in a large skillet over medium heat. Once the butter has melted, add the finely chopped onion. Sauté until soft and translucent, about 3-4 minutes.

    Add the minced garlic to the skillet and cook for an additional minute, stirring frequently so it doesn’t burn.

      Next, incorporate the diced chicken breast into the skillet. Cook until the chicken is browned on all sides, approximately 5-7 minutes. Ensure that it is fully cooked through.

        Stir in the sliced mushrooms and cook for about 5 minutes, until they begin to soften.

          Add chicken broth, thyme, paprika, salt, and pepper, stirring well to combine. Let the mixture come to a gentle simmer for about 3 minutes.

            Reduce the heat to low and pour in the heavy cream. Stir thoroughly and allow it to simmer for another 5-7 minutes, until the sauce has thickened slightly.

              Taste and adjust seasoning with more salt and pepper as needed.

                Remove from heat and serve hot, garnished with freshly chopped parsley.
