8 slices of thick Brioche or Challah bread

1 cup fresh strawberries, hulled and sliced

4 oz cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract

3 large eggs

½ cup whole milk

1 teaspoon ground cinnamon

1 tablespoon butter (for cooking)

Maple syrup (for serving)

Fresh mint leaves (for garnish)

Instructions
 

In a medium bowl, blend together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.

    Take 4 slices of the bread and spread a generous amount of the cream cheese mixture on each slice. Top with sliced strawberries, then place the remaining 4 slices of bread on top to create sandwiches.

      In a shallow bowl, whisk together the eggs, milk, and cinnamon until fully combined.

        Heat a large skillet or griddle over medium heat and add half a tablespoon of butter.

          Dip each sandwich into the egg mixture, allowing both sides to soak for a few seconds.

            Carefully place the soaked sandwiches in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Add more butter as needed while cooking.

              Once cooked, remove the French toast from the skillet and keep warm in a low oven while you finish the remaining sandwiches.
