Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and onion powder.
Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
Make the Sauce: In the same skillet, add the fresh cranberries, orange zest, orange juice, and honey. Stir well, scraping up any browned bits from the bottom of the skillet. Allow the mixture to simmer for about 5-6 minutes, or until the cranberries start to burst and create a sauce consistency.
Combine: Return the cooked chicken back into the skillet with the cranberry orange sauce. Spoon the sauce over the chicken and let it cook for an additional 2-3 minutes to heat the chicken through.
Garnish and Serve: Remove from heat and garnish with chopped fresh parsley before serving.
Notes
Use fresh cranberries when in season for the best flavor.
