4 boneless, skinless chicken breasts

1 cup fresh cranberries

1 cup orange juice (freshly squeezed preferred)

1/4 cup honey

1 tablespoon Dijon mustard

1 teaspoon grated orange zest

2 cloves garlic, minced

1 teaspoon olive oil

Salt and pepper to taste

1/4 cup chopped fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium bowl, combine the fresh cranberries, orange juice, honey, Dijon mustard, orange zest, and minced garlic to create the cranberry-orange sauce. Mix well until the cranberries are well-coated.

      Season the chicken breasts on both sides with salt and pepper, then place them in a baking dish.

        Drizzle the olive oil over the chicken breasts for added moisture.

          Pour the cranberry-orange sauce over the chicken, ensuring the breasts are fully covered.

            Cover the baking dish with aluminum foil to trap the moisture, then place it in the preheated oven. Bake for about 25-30 minutes.

              Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

                Once cooked, remove from the oven and let it rest for a few minutes. This helps the juices redistribute for even more tender chicken.
