In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until thoroughly mixed and smooth.
Add in the chopped dried cranberries, slivered almonds, chia seeds, vanilla extract, and a pinch of sea salt. Mix until all ingredients are well incorporated and form a sticky mixture.
Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
Place the formed energy bites on a parchment-lined baking sheet or plate.
Once all the mixture has been formed into bites, refrigerate for at least 30 minutes to allow them to firm up.
After chilling, store the energy bites in an airtight container in the refrigerator for up to one week.
Notes
Serve the energy bites in a mason jar or on a decorative plate, and sprinkle a few extra slivered almonds and cranberries around them for a colorful touch.
