2 cups cooked shredded chicken

1 cup long-grain white rice

1 small onion, diced

3 cloves garlic, minced

3 cups chicken broth

2 cups shredded carrots

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon onion powder

1 tablespoon olive oil

1 cup cream cheese, softened

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the carrots and cook for another 3 minutes, until they begin to soften.

        Pour in the chicken broth and bring the mixture to a boil.

          Add the long-grain rice, shredded chicken, thyme, oregano, onion powder, salt, and pepper. Reduce heat to low and let it simmer for about 15 minutes.

            Add the frozen peas to the soup and stir in the softened cream cheese until it's fully melted and incorporated.

              Allow the soup to simmer for another 5-10 minutes until the rice is tender and the flavors have melded together.

                Taste and adjust seasoning as necessary.

                  Serve hot, garnishing each bowl with fresh parsley for added color and freshness.
