For the Biscuit Dough:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional)

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

1/4 cup fresh parsley, chopped

For the Crab Filling:

1 cup lump crab meat, drained

1/4 cup cream cheese, softened

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon Old Bay seasoning

Salt and pepper, to taste

For the Lemon Butter:

1/4 cup unsalted butter, melted

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 tablespoon fresh parsley, chopped

Pinch of salt

Instructions
 

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the biscuit dough: In a large mixing bowl, whisk together the flour, baking powder, garlic powder, salt, and cayenne pepper. Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

      Add cheese and buttermilk: Fold in the shredded cheddar cheese. Pour in the buttermilk gradually, stirring until just combined. Do not overmix.

        Make the crab filling: In a separate bowl, gently combine the lump crab meat, cream cheese, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper. Mix just until the crab is combined, being careful not to break it up too much.

          Form the biscuits: On a floured surface, roll out the biscuit dough to about 1 inch thick. Using a biscuit cutter or a cup, cut out rounds from the dough. Place half of the rounds on the prepared baking sheet.

            Stuff the biscuits: Spoon a generous tablespoon of the crab filling onto each biscuit round on the baking sheet. Top with another biscuit round, sealing the edges slightly to enclose the filling.

              Bake: Bake in the preheated oven for 15-18 minutes or until golden brown and cooked through.

                Prepare the lemon butter: While biscuits are baking, whisk together the melted butter, lemon juice, lemon zest, parsley, and a pinch of salt in a small bowl.

                  Brush and serve: Once the biscuits are out of the oven, brush the tops with the lemon butter. Serve warm with additional lemon butter on the side.
