1 pound lump crab meat

1/2 cup panko breadcrumbs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon Old Bay seasoning

1 teaspoon garlic powder

1/4 cup finely chopped green onions

1/4 cup finely diced red bell pepper

12 egg roll wrappers

Oil for frying (vegetable or canola oil)

Sweet chili sauce (for serving)

Instructions
 

In a large mixing bowl, combine the lump crab meat, panko breadcrumbs, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, garlic powder, green onions, and red bell pepper. Gently fold the ingredients together until well mixed, being careful not to break up the crab meat too much.

    Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2-3 tablespoons of the crab mixture in the center of the wrapper.

      Moisten the edges of the wrapper with water using your fingertip. Fold the bottom corner over the filling, then fold in the sides and roll it up tightly to seal. Repeat with the remaining wrappers and filling.

        Heat about 2 inches of oil in a deep skillet or pot over medium heat until it reaches 350°F (175°C).

          Carefully drop the egg rolls into the hot oil, a few at a time. Fry for 3-4 minutes or until golden brown and crispy, turning occasionally for even cooking. Make sure not to overcrowd the pan.

            Using a slotted spoon, transfer the fried egg rolls to a paper towel-lined plate to drain excess oil.

              Serve the crab cake egg rolls hot with sweet chili sauce on the side for dipping.
