green beans, trimmed and cut into 1-inch pieces

diced tomatoes with juices

dried thyme

smoked paprika

Instructions
In a large pot or Dutch oven, heat olive oil over medium heat.
Add the ground turkey, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes.
Stir in the diced onion and garlic, cooking until the onion is translucent, about 3 minutes.
Add the carrots, celery, and bell pepper, stirring occasionally for another 5 minutes until they start to soften.
Mix in the zucchini and green beans, stirring to combine.
Pour in the chicken broth and add the diced tomatoes, thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.
Lower the heat and let the soup simmer for 20-25 minutes, allowing flavors to meld and vegetables to tenderize.
Stir in the fresh spinach just a few minutes before serving, until wilted.
Taste and adjust seasoning if necessary.
Serve hot, garnished with fresh parsley.
