Cowboy Tater Tot Casserole

Ingredients
  

1 lb (450g) ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup bell pepper, diced (any color)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 can (10 oz) diced tomatoes with green chilies (undrained)

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

3 cups shredded cheddar cheese

1 bag (32 oz) frozen tater tots

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large skillet, over medium-high heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain excess fat if necessary.

      Stir in the bell pepper, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for an additional 3-4 minutes until heated through.

        In a greased 9x13 inch casserole dish, layer the beef mixture evenly across the bottom.

          Sprinkle 1.5 cups of shredded cheddar cheese on top of the beef mixture.

            Carefully arrange the frozen tater tots in a single layer on top of the cheese.

              Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.

                Remove the casserole from the oven and sprinkle the remaining 1.5 cups of cheddar cheese on top. Return the casserole to the oven for an additional 5-7 minutes to melt the cheese.

                  Once melted and bubbly, remove the casserole from the oven and let it cool for a few minutes.

                    Garnish with fresh cilantro before serving.
