Ingredients
  

1 pound ground beef

1 medium onion, diced

3 cloves garlic, minced

2 large carrots, chopped

2 potatoes, diced

1 can (15 oz) diced tomatoes

1 can (15 oz) kidney beans, drained and rinsed

2 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

Fresh parsley or cilantro for garnish

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain the excess fat.

    Add the diced onions and minced garlic to the pot, sauté for 3-4 minutes until the onions are translucent.

      Stir in the chopped carrots and diced potatoes, cooking for an additional 5 minutes.

        Add the can of diced tomatoes (with juices), kidney beans, beef broth, Worcestershire sauce, chili powder, cumin, salt, and pepper. Mix well.

          Bring the stew to a gentle simmer, cover, and allow it to cook for 20-25 minutes until the vegetables are tender.

            Add the corn during the last 5 minutes of cooking to warm it through.

              Taste and adjust seasonings if necessary.

                Serve hot, garnished with fresh parsley or cilantro.
