1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 (10 oz) can diced tomatoes with green chiles

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

8 oz cream cheese, cubed

2 cups shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro for garnish

Tortilla chips for serving

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent, about 3-4 minutes.

      Stir in the diced tomatoes with green chiles, black beans, corn, smoked paprika, cumin, chili powder, salt, and pepper. Mix well to combine.

        Lower the heat to medium and add the cubed cream cheese, stirring constantly until the cream cheese has melted and blended into the mix.

          Gradually sprinkle in the shredded cheddar cheese, stirring until it is melted and creamy throughout. Continue to cook for an additional 3-4 minutes until heated through.

            Taste and adjust seasoning as preferred. If the queso is too thick, add a little milk until the desired consistency is reached.
