Ingredients
  

1 pound ground beef (or ground turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) canned corn, drained

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup frozen tater tots

1 cup shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet over medium heat, heat the olive oil and add the diced onion. Sauté for about 3-4 minutes, until the onions are softened.

      Add the minced garlic and ground beef (or turkey) to the skillet. Cook until the meat is browned, breaking it up with a spatula (about 5-7 minutes). Drain excess fat if necessary.

        Stir in the canned corn, black beans, diced tomatoes (with their juices), chili powder, cumin, salt, and pepper. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld.

          Spread the meat mixture evenly in a greased 9x13-inch baking dish. Top it with an even layer of frozen tater tots.

            Sprinkle the shredded cheddar cheese over the tater tots, ensuring coverage.

              Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.

                Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired.

                  Serve warm and enjoy your hearty Cowboy Casserole!
