1 lb flank steak

Salt and black pepper to taste

1 tablespoon olive oil

4 mini slider buns

4 slices sharp cheddar cheese

½ cup arugula or baby spinach

¼ cup diced tomatoes

½ cup Cowboy Butter (recipe below)

Cowboy Butter Ingredients:

½ cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Make the Cowboy Butter: In a small bowl, combine the softened butter, minced garlic, parsley, Worcestershire sauce, smoked paprika, cayenne pepper, and salt. Mix well until fully combined. Spoon the Cowboy Butter onto a piece of plastic wrap, shape it into a log, and refrigerate until firm (about 30 minutes).

    Cook the Steak: Preheat a grill or cast-iron skillet over medium-high heat. Season the flank steak generously with salt and pepper. Drizzle olive oil on the grill or skillet, then lay the steak down to sear. Cook for about 3-4 minutes on each side for medium-rare (adjust time according to your preference).

      Rest the Steak: Once cooked to your liking, remove the steak from the heat and let it rest for at least 5 minutes. This allows the juices to redistribute.

        Slice the Steak: After resting, slice the steak against the grain into thin strips.

          Assemble the Sliders:

            - Toast the slider buns on the grill or in a skillet until golden brown.

              - Place a small amount of arugula on the bottom half of each slider bun.

                - Add 2-3 slices of the cooked flank steak on top of the arugula.

                  - Place a slice of cheddar cheese over the steak, and then dollop a generous spoonful of the Cowboy Butter on top.

                    - Finish by adding diced tomatoes and covering with the top half of the slider bun.

                      Serve: Serve the sliders warm, with extra Cowboy Butter on the side if desired.
